I decided to crack out an old recipe from a magazine I veganized and tweaked. Take a gander!
Oatmeal Hazelnut Cookies
Ingredients I
2 cups quick cooking oats
1 1/2 cups flour
1/2 cup nut meal (I used ground hazelnuts)
2/3 cup cocoa powder
3/4 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
Ingredients II
1 1/2 cups sugar
1 tbsp. ground flax seeds
2/3 cup + 1 tbsp non dairy milk -- I used unsweetened almond milk
2/3 cup peanut oil
Vanilla, Hazelnut extract
Optional: up to 3/4 cup fruits, nuts, seeds.
Pre-heat oven to 350F.
In a medium sized bowl, mix together Ingredients I. In a large bowl, combine Ingredients II, until thick. Slowly incorporate your dry mixture into your wet mixture.
Line two baking sheets with parchment paper. Use a tablespoon to drop (and shape, if desired) the batter. Bake for 10-12 minutes.. 11 worked best for me! Once baked, let sit in the baking sheets for five minutes before transferring to a cooling rack.
Makes 2 dozen.
I'm really pumped to get outside and head out tonight. I want to bike SO bad, but it's still icy and frankly, pretty cold.. But as soon as I see sun, I forget everything else and convince myself its cardigan weather. Winnipeg problems!
